Hello !!!!! thanks for always go to visit. To start the week I want to share with you some suggestions for salads ...

Potato Salad, Chives and Parsley

Ingredients: 1 Kilo
Small Potatoes (Colombia, small purple potatoes also when they can find)
1 tablespoon olive oil chopped parsley



Chives chopped Dressing:

5 tablespoons extra virgin olive oil
1 tablespoon sherry vinegar 1 teaspoon

dijon mustard sea salt (may substitute for table salt) Freshly ground black pepper


Quite simply, prepare the vinaigrette and reserve. Cook the potatoes in salted water (if steamed add more salt to the dressing), once tender pass through cold water to stop cooking. In a large bowl, sprinkle with the tablespoon of olive oil and mix with the chives and parsley, then drizzle with vinaigrette and serve at room temperature.
PD: You can replace the chives and shallots and a clove of garlic without root, finely chopped.
